Menu Plan Monday – 9/5-9/11

A little late putting up the menu plan, thanks to the long weekend.  It has been VERY relaxing, and just what I needed!

Monday: 

     Breakfast: Cereal/Milk, egg drop soup for those who are weird

     Lunch: Nachos

     Dinner: Garlic/Ginger Chicken Stir-fry (improvised by Hubs)

 

Tuesday:

     Breakfast: Pumpkin Scones      

     Lunch: Ham and Cheese Sandwiches, apples, carrots

     Dinner: Sour Cream Chicken Enchiladas, Mexican rice, beans

 

Wednesday:

     Breakfast: cereal and milk

     Lunch: Turkey roll-ups, apples, puddng

     Dinner:   At church

 

Thursday:

     Breakfast: bacon and egg cups

     Lunch: chicken and noodles (need 2 more thermoses)

     Dinner: hamburgers, French fries, baked beans

 

Friday:

     Breakfast: muffins

     Lunch: ham sandwiches, apples, carrots, puddng

     Dinner: pizza

 

Saturday:

     Breakfast: cereal and milk

     Lunch: Leftover buffet

     Dinner:  Packet fish, stir fry vegetables, saffron rice

 

Sunday:

     Breakfast: cinnamon rolls

     Lunch: out

     Dinner: Pappa’s pick 

 

Menu Plan Monday – 8/29-9/4

Here is this week’s menu plan. I’m using a few recipes I’ve ‘pinned’ over on pinterest.com. LOVING that site, but devoting way too much time to ‘pinning’, and then jumping down the various rabbit holes I discover from it! This menu is linked on Organizing Junkie’s Menu Plan Monday, where you can find hundreds of other menu plans, just like this!

Monday:
Breakfast: Cinnamon pull-apart bread, oj
Lunch: pb&J roll-ups, carrots, pretzels, cupcakes
Dinner: tuna casserole, salad, rolls

Tuesday:
Breakfast: Cereal, juice
Lunch: ham sandwiches, apples, carrots, chips
Dinner: Buffalo chicken and potato casserole, salad

Wednesday:
Breakfast: bacon pancakes, juice
Lunch: pizza rolls, salad, milk
Dinner: Hamburgers, baked beans, salad

Thursday:
Breakfast: Cereal, milk
Lunch: homemade lunchables (ham lunch meat, cheese, crackers)
Dinner: Thai chicken pasta

Friday:

Monday:
Breakfast – Sausage, egg, and cheese cups
Lunch – pb&j or ham sandwiches, carrots, gripz cheese crackers, apples
Snack – Cinnamon Sugar Pull apart bread
Dinner – Pulled Pork Sandwiches, salad, corn on the cob

Tuesday:
Breakfast – Cereal
Lunch – tuna salad sandwiches, pears, chips, carrots
Snacks – celery & PB
Dinner – Lasagna, salad, garlic bread

Wednesday:
Breakfast – Waffles
Lunch – PB &J, chips, apples, carrots
Snack – popcorn
Dinner – Hamburgers, fries, baked beans

Thursday:

Breakfasts – Fried eggs & toast, cold cereal, mush, pancakes & sausage, egg & bacon cups, fruit, granola with yogurt.

Lunches – peanut butter & jelly sandwiches, turkey wraps, turkey sandwiches, tuna salad sandwiches, egg salad sandwiches, soup

Dinners:
Monday: Baked Teriyaki Chicken, broccoli, rice
Tuesday: Chicken Fetuccine Alfredo, salad, garlic bread
Wednesday: Chicken fajitas, beans, mexican rice
Thursday: Pork Fried Rice, egg rolls
Friday: Parent’s Night Out (I think we’re having a fondue party)
Saturday: Homemade pizza!!!!
Sunday: Pot roast, roasted veg & potatoes, cheesecake for dessert.

Menu Plan Monday – 6/27-7/10

I’m going to go ahead and post the entire two week menu plan I have, so it’s handy next week. Since we have started being more restrictive on our budget, I have been trying to plan my menus in two week increments, to fit into our pay periods. I had a nice boost last week by doing a taste test that paid $20. It covered our “milk money” (and toilet paper, paper towels, and butter) that would have exceeded our budget. I’m finding myself looking for these little “found money” opportunities – both on the web and just from friends. The taste test was a tip from a friend at church, for which I am VERY thankful! (Thanks God! And Lori!!)

So, here’s the menu plan for the week. I tried to stay fairly frugal this week. We’re using a turkey purchased awhile ago on sale ridiculously cheap – and will make several meals from that. One of the stores had chicken leg quarters on sale for .49/lb in 10 lb bags, so I bought that today, boiled the chicken, and will use that for several meals as well. I would love to get into a freezer cooking mindset – or at least a pre-cooking mindset. Having the protein ready to go, so all I have to do is throw it into the sauce or whatever and warm it up is not only a great time saver – it keeps me from having to heat the house up cooking something during the warmer days this week! Score!

I also saw an interesting recipe for corn dog muffins, as well as a DIY corn muffin mix this week. My husband LOVES corn dogs, so this is a great, easy breakfast idea for him. He can take them on the go, so even on those mornings when he has a hard time rolling out of bed, he’ll have something to grab and go!

Here’s the menu plan for the upcoming weeks:

Lunches: Ham, turkey, bologna, peanut butter, ramen noodles

Sunday (6/26): Roast turkey, mashed potatoes, stuffing, peas

Tuesday (6/28): Steak, baked potatoes, salad
Wednesday (6/29): BBQ Chicken/buffalo chicken pizza
Thursday (6/30): Turkey pot pie (Recipe is just for crust – using leftover turkey, frozen veg, and turkey gravy)
Friday (7/1): Sirloin tips & noodles, salad, rolls
Saturday (7/2): Grilled Chicken, rice, salad
Sunday (7/3): BLTs, pasta salad
Monday (7/4): Brats, potato salad, melon
Tuesday (7/5): Shepherd’s pie, rolls
Wednesday (7/6): pizza, salad

Menu – a little late

I did my shopping for 2 weeks’ worth of meals on Saturday. I will have to run to the store for a few things that would have gone bad in two weeks (such as salad) and a bag of potatoes (because we used 10 lbs !!! for potato salad the other day.) But – here’s my 2 week menu plan.

Monday: Spicy Pork Roast and steak for dinner with pasta salad and watermelon
Tuesday: Skillet lasagna, peas, watermelon, bread
Wednesday: Pizza, salad
Thursday: Chicken & noodles with peanut sauce, edamame
Friday: Slow cooker pot roast, potatoes, roasted vegetables
Saturday: pork featherbones, potato salad, bbq beans
Sunday: Vegetable beef soup, bread
Monday: Tuna casserole, green beans, peaches
Tuesday: Chicken kabobs, rice, carrot salad

Wannabe

I keep opening up my blog, staring at the editor, writing a few words…losing interest…and closing it without saving anything.

It makes me sad.

I have been a blogger for over 9 years. For some reason, since Bonbon was born, I just have almost entirely lost interest. I used to write several blog posts a day. Facebook is partially to blame. A lot of what I would have written now gets chopped into less than 420 character snippets and shared with all of my online “friends”. Turns out a lot of what I think of to update is completely and utterly pointless.

So I am a wannabe blogger, most of the time.

I am also a wannabe healthy person. I started my weight loss/get healthy journey a month and a half ago. Three weeks ago, I had plantar fascitis flared up so bad, I could barely walk. After a trip to the doctor to discuss why exactly it was so bad, I was told to spend a few weeks on anti-inflammatories and stay off my feet. The gym does not have a pool. So…sidelined for a bit on that journey. Still motivated – I feel too old and broken to not be motivated at this point.

I am also a wannabe financial genius. Ok, seriously – not a genius, but I just really would like for us to get our financial house in order so that we don’t have those “oh crap” moments 5 days from payday every other week. That’s been happening ever since the move – since the burden of all the deposits we put down was pretty major. We started Dave Ramsey’s Financial Peace University three weeks ago, with hopes of making big changes. We shall see.

We have also been talking about whether or not I should go back to work. I will admit, it is the last thing I WANT to do. The idea of not being home with Bonbon every day just about kills me, and I really feel that, with 3 teenagers and a tween, we’d be nuts to not have adult supervision here! (Plus I think they might kill each other if I’m not here.)

So life is in a pretty major transition at this point. We’ll see where it goes. It would make perfect sense to blog all of these things, yes?

That said – I AM going to get back on the menu planning horse!!

Monday: Roast turkey, mashed potatoes, stuffing, corn, rolls
Tuesday: Boneless chicken wings, pasta salad, peas; BIRTHDAY CAKE! (For me!!!)

Saturday: Grilled chicken, broccoli cheese rice, mixed veg
Sunday: Brats, chips, beans
